LIONS MANE MUSHROOMS
Lion’s Mane mushrooms are described as having a flavor akin to lobster. Caramelization is key to bringing out the sweetness and salt helps clarify the sweet nutty tones. The texture of these mushrooms is excellent and they do well either sliced into medallions and seared or pulled into chunks similar to chunked crab or lobster meat. Perfect for “lobster rolls” or “crab cakes.”
Flavor: Savory, sweet, nutty
Texture: Dense and meaty. Very young fruit grows in a dense ball, more mature fruit grows into branching “pom poms” that are more suited for pulling into chunks.
