Ingredients:
- 1 lb. Oyster Mushrooms
- 1/4 C Parsley
- 2 TBSP Avocado Oil
- 2 Cloves Garlic
- Butter (Optional)

Instructions:
1. Prepare the mushrooms: Gently clean mushrooms with a damp cloth and trim any tough stems.
2. Heat the oil: Heat avocado oil in a large skillet over medium-high heat.
3. Cook the mushrooms: Add the mushrooms to the skillet in a single layer. Let them cook undisturbed for 3–4 minutes until golden brown on one side.
4. Flip and sauté: Flip the mushrooms and cook for another 3–4 minutes until tender and caramelized.
5. Add garlic: Stir in the minced garlic, parsley, and optional butter for extra richness & cook for 30 seconds until fragrant.
6. Season and garnish: Turn off heat. Season with salt and pepper & top with additional parsley.
7. Serve: Remove from heat and enjoy immediately. *remove butter for a vegan option
